Sisters' information set to private shows up on ministering slips
We have a few sisters in our ward who have certain profile information set to private (e.g., phone number, email, or everything). It shows as private, but when our Relief Society prints the ministering assignments out, the information shows up on the slip. For example, one sister has her email set to private but not her phone number, but when the ministering assignment is printed, her email shows up and not her phone number. Another sister has everything set to private, but everything shows up on the printed slip. Has anybody experienced this? Any suggestions?

Just be aware there are two phone numbers, even for single members: The Household and the Personal. You might want to verify which phone number has is showing and which has been set to private.
You can report the issue via the Feedback link. But it's possible that ministers are supposed to see private information as they been given a specific assignment as outlined in General Handbook 21.1. It's not that much different than the assignment given to Ward Council members and they can see private information.

There's also the Household Visibility Limit, which sets a minimum (maximum?) visibility for all settings (individual settings can be more restrictive). So for cases where a member is adamant that "all info" should be private, that global setting can help avoid the issues with discrepancies between Household and Individual settings.
But as russellhltn states, if the intent is that ministers see this info as they are the assigned extension of the Presidency, then that's another matter.

There's also a household email and a personal email.
