A common scripture marking technique is to highlight a specific word every time it is in a verse(s)? So for instance, I'd like to highlight the word "remember" every time it shows up in a verse. Right now, each of those highlights has to be a different annotation, which can be really messy....is there any chance of being able to create non-sequential highlights as a single annotation?

This isn't currently possible, but you could send it as a feature request using the in-app Send Feedback form in Gospel Library settings.
Do you have any idea what the step-by-step process might look like to create multiple highlights that are connected? I can't think of a clean way to do that.
